My Sourdough Bread

500g Bread Flour

350g Lukewarm Water

100g Active Sourdough Starter

10g Of Salt

Start in the morning. Grab a big bowl and toss in 500g of bread flour (or all-purpose, don’t overthink it) with 350g of lukewarm water. Stir it into a shaggy mess. You’re not kneading, just mixing. Cover the bowl and walk away for 30–45 minutes. Let the flour and water get to know each other, this is the autolyse, where the magic begins.

Come back. Now, add 100g of your bubbly sourdough starter (you fed it last night, right?) and 10g of salt. Use your hands and mix it all together. It’ll be sticky, borderline annoying, but just keep folding and squishing until it feels more like a dough than a swamp.

Now the bulk fermentation phase kicks in. Leave the dough in the bowl, covered, at room temp. Every 30 minutes for the next two hours, do a little stretch-and-fold: grab one side of the dough, stretch it up, fold it over. Turn the bowl, repeat. You’ll do this 4 times total. It’s oddly therapeutic. After that, just let it sit. Total time here is about 4–6 hours. The dough should get puffier, a bit jiggly — like it’s had a good nap.
